Kayak Air Bags

How can a bag be airtight but not waterproof. Just destroyed a £200 phone Grrrr?
I put my keys and phone in a supermarket plastic bag, tied it up, and compressed it. No leakage of air – just like a balloon.
Then went out on my kayak and when I got back water had got in. How did that happen? I thought that if it can’t get air in it can’t get water in either. Isn’t that physics?
What do they teach this stuff for if it doesn’t work and costs you a £200 phone.
The phone is dead now.
Well if you spent that much on a phone I assume you were sensible enough to get insurance?
